We want to produce wines that reflect the territory and the traditions, that enhance the native vines respecting the environment. We operate organically because we firmly believe that the best ingredients for the wine are grapes, the terroir and the authenticity of the producer. In the vineyard, we cautiously use copper and sulfur, green manure in order to preserve the fertility
of the soil. In the winery, the alcoholic fermentation occurs naturally, without the use of selected yeasts. In addition to the white grape varieties (pecorello and mantonico), the typicality of the territory permits to enhance the articularities of a vine that for ages has found its home in these places, the so-called Lacrima di Cassano, of ancient origins, that has lived a period of abandonment due to its late maturation, in the field and in barrel, in favour of vines of faster fruition.
